4 ingredient cookies

It has been one of those weeks when I crave cookies. I don't know what it is about cookies. I could pass up brownies, chocolate, ice cream, but cookies are my weakness. It's probably because they are small and I feel like I'm not eating so poorly if I eat "just one".

Let's be honest, I never eat just one.

And then my fellow yoga teacher trainee told me about these cookies. I was in love from first bite. These cookies are beyond easy to make and are almost guilt free.


4 ingredient cookies
Yields about 18 cookies 
  • 1 egg
  • 1 cup coconut sugar (can substitute with regular white sugar)
  • 1 cup almond butter (can substitute with peanut butter)
  • 1/3 cup Enjoy Life chocolate chips (can substitute with regular chocolate chips)
1. Preheat oven to 350
2. Combine egg and sugar in a large bowl
3. Fold in almond butter and chocolate chips until fully combined
4. Drop spoonfulls of cookie dough onto pre-greased or lined cookie sheet
5. Bake for 12 minutes - cookies should no longer look shiny
6. Enjoy them while they're hot or allow them to cool and enjoy later
Side note: these make an awesome cookie sandwich with Nutella in the middle, just sayin'
